Role at The Chef's Academy
Chef Thomas "Rusty" Nicholas began his 25 year culinary career in the food and beverage business as the opening sous chef for Club Corporation of America's Capital City Club in Raleigh, North Carolina. He then was the Executive Chef for MacGreger Country Club in Cary, North Carolina. He returned to CCA as Executive Chef of the Capital City Club and then assumed regional responsibilities for 7 mid-west clubs.
His awards and honors include being selected to conduct taste tests for Cape Clear Foods, a division of Brown-Forman Corporation, one of the largest American-owned companies in the wine and spirits business, and being chosen by Food & Winemagazine to prepare the grand prize winner's gourmet dinner.
Prior to his position at The Chef's Academy, Chef Nicholas was executive chef at Governors Club in Chapel Hill, N.C. He has served as executive chef and general manager at a number of country clubs in various states across the South. Chef Nicholas earned a bachelor's degree from the University of Missouri in Columbia, Mo. and an ASB degree in culinary arts management at Sullivan University in Louisville, Ky. He has a lifetime teaching certificate from the University of Missouri.
